The Tagatose is a kind of the monosaccharide classified into the ketohexose.

The tagatose has a similar flavor to sugar. It has only the calorie of 38% though it has the sweetness of 92% of sugar. Therefore, the tagatose is used as sweeteners. Because it causes neither the rise in the plasma glucose concentration nor the decayed tooth.

Safety was declared from FAO/WHO in 2001, and the tagatose was taken as a food additive also in Japan in 2003.



水溶液中では異性化を起こし、環状構造との混合物となる(変旋光)。平衡状態に達したときに最も存在比が高いのは α-ピラノース体(α-D-タガトピラノース)である。
